Chef Victor Albisu grew up in a Peruvian household and trained in fine dining kitchens, and Taco Bamba is what happens when that background collides with an obsession for Mexican street food. The original Falls Church location is still the best — a no-frills counter spot where the tacos are inventive without being gimmicky. The Oscar Taco (crispy cheese shell, carne asada, guac) is the one everyone talks about, but don't sleep on the more traditional options like the suadero or the al pastor. The tortillas are made in-house, the salsas hit hard, and there's usually a line. Get in it.

Another José Andrés joint — the man basically owns Penn Quarter at this point — and one of the few upscale Mexican restaurants in DC that doesn't feel like it's pandering. Oyamel treats regional Mexican cuisine with real respect. The grasshopper tacos (chapulines) are the famous dare-your-friends dish, but the ceviche flights and mole negro are the real reasons to come. The cocktail program is outstanding — their margaritas use fresh-squeezed citrus and real agave, and it shows. A great spot when you want Mexican food in a sit-down-and-linger kind of way.

The enchiladas suizas are creamy and perfectly sauced, the carnitas are crispy where they should be and tender everywhere else, and the guacamole is made tableside with real chunks of avocado (as it should be). The tequila and mezcal list is deep if you're looking to explore agave spirits, and the weekend brunch with chilaquiles is a neighborhood institution.

This is the place where construction crews and senators sit at the same counter at 7 AM eating huevos rancheros smothered in Hatch green chile. The breakfast burrito is legendary and rightfully so. If you've never had New Mexican food, prepare to have your concept of Mexican-American cuisine rearranged.

Langley Park and the surrounding stretch of Piney Branch Road is the beating heart of Central American food in the DMV, and La Casita is one of its crown jewels. The pupusas here are pressed to order on a flat-top griddle — thick, stuffed with gooey cheese and loroco or chicharrón, and served with tangy curtido and tomato salsa. At $3-4 each, they're the best deal in the entire region. The tamales are also outstanding, and the fresh horchata is silky smooth. Don't expect ambiance — this is a market with a few tables. Expect incredible food at prices that feel like a time machine.
